Deep fried sardines

Mike Robinson transforms fresh sardines into a fabulous supper, with a light dusting of seasoned flour and some tangy lime wedges
Ingredients
- 50g plain flour
- black pepper
- 8 sardines, de-headed
- 50ml vegetable oil, for frying
- wedges of limes, to serve
Method
1. Season the flour with salt and fresh ground black pepper and sprinkle it evenly over the fish.2. Heat the oil in a frying pan over a moderate heat and fry the sardines for 2-3 minutes on each side, until crispy.
3. Serve immediately with wedges of fresh lime.
