Nutritious and delicious, Tamasin Day-Lewis's colourful mash couldn't be simpler to prepare

Method

1. Put the carrots and swede in a large saucepan of salted water. Bring to the boil, then cover and simmer briskly for about 20 minutes until soft.

2. Drain in a colander set over a bowl. Reserve the water and put the vegetables in a warm serving bowl.

3. Pour a little of the water into the vegetable bowl and start to mash.

4. Once you have mashed the carrot and swede to your preferred texture, add a little freshly grated nutmeg and black pepper to taste and mix in gently.

A nice change from the norm!

I like to boil the vege in a pot along with a chicken or vegetable stock cube or two (reduce salt if you do). Also do this with brussel sprouts to reduce the sulphur odour and take away the bitterness of some you might be misfortunate to buy.
Keep the water for the gravy, but also makes a good soup base when added to all those left over Xmas vegetables,roast potatoes, turkey etc which when added to some sweated onions,herbs to taste, garlic, cayenne pepper and sweet paprika brought to boil for 15 mins then blitzed with blender add some tinned sweetcorn and cream.
