You'll be keen to start smoking straight away with this deliciously different fish recipe from Mike Robinson!

Ingredients

  • 2 tbsp Olive oil
  • 3 cloves Garlic, finely chopped
  • 3 cm Ginger, finely chopped
  • juice of 2 limes
  • 2 tbsp dark Honey
  • 5 tbsp dark Soy sauce
  • 2 large fillets of firm white fish, skin removed
  • 3 red chillies, chopped

Method

1. Heat the oil in a frying pan over a medium heat and gently fry the garlic and ginger until soft but not coloured.

2. Add lime juice, honey and soy sauce and simmer gently until the sauce is thick and sticky. Brush the marinade over the fish and smoke for 30 minutes on a trivet.

3. Scatter with chopped chilli to serve.

I live in Dubai, so was looking for a recipe using regionally caught fish (which Nile Perch is). I was disappointed with this one. When do the chillies get added? Also, what exactly is involved in the smoking of the fish? A little more information was required.
