This oh-so-easy recipe for trout with lime and celery from Mike Robinson is guaranteed to tickle the taste buds

Ingredients

  • 2 trout fillets, (skin on, but pin-boned)
  • black pepper
  • 5-6 tbsp Olive oil
  • small handful of Dill
  • small handful of tarragon
  • 6 sticks young Celery
  • juice of 3 limes

Method

1. Season the fish with salt and pepper.

2. Heat 3-4 tablespoons of olive oil in a frying pan over a medium heat and cook the fillets, skin side up, with the herbs, celery and limejuice for 3-5 minutes.

3. Add a little more oil to the pan, carefully turn the fish over and cook for a further 1-2 minutes. Serve immediately.
