Method

1. Melt a little butter in a large non-stick frying pan. Prick the sausages, then fry them over medium-low heat for about 15 minutes, turning them until evenly browned and no longer pink inside.

2. While the sausages are cooking, melt about 50g of butter in another pan. When it is foaming, toss in the apple pieces. Fry over medium-high heat for 7-10 minutes, turning, until they start to caramelize.

3. Add the apples to the sausages, along with a splash of apple juice and a pinch of cinnamon. Stir carefully to mix. Raise the heat a little and sizzle for a minute until heated through.

4. Serve with mashed potatoes and a selection of roasted root vegetables and butternut squash.
