For a simple but classic Italian starter try James Martin's recipe for a delicious prosciutto and melon salad
Charentais melon, prosciutto, wild rocket and pecorino salad
Method
2. Arrange the melon slices on a serving plate together with the prosciutto ham. Sprinkle over the rocket leaves.
3. Using a potato peeler, shave the Pecorino cheese over the rocket.
4. Drizzle with the olive oil, sprinkle with salt and serve.

200g Pecorino cheese
3 tbsp extra virgin olive oil
