Charentais Melon, Prosciutto, Wild Rocket and Pecorino Salad

Method

 
1. Halve the melons and scoop out the seeds. Slice the melon thinly, cutting off the skin.

2. Arrange the melon slices on a serving plate together with the prosciutto ham. Sprinkle over the rocket leaves.

3. Using a potato peeler, shave the Pecorino cheese over the rocket.

4. Drizzle with the olive oil, sprinkle with salt and serve.

2 Charentais melons
24 fine slices of prosciutto ham
100g wild rocket leaves
200g Pecorino cheese
3 tbsp extra virgin olive oil
sea salt
