Sesame and soya dressed noodles with seared strips of teriyaki tuna

Serve up a stylish meal with Lesley Waters's appetising recipe for noodle salad topped with seared marinated tuna steak

Ingredients

  • 200g thread egg noodles, cooked and drained
  • 115g sugar snap peas, blanched, refreshed and halved lengthwise
  • 2 large Carrots, peeled and cut or peeled into very fine strips
  • 2 tbsp toasted Sesame seeds
  • black pepper

Method

1. In a bowl, mix together the lime juice, olive oil and teriyaki sauce. Pour the lime juice mixture over the tuna steaks and season with freshly ground black pepper. Set to one side for 30 minutes.

2. To make the dressing, mix together the sunflower oil, spring onions, soy sauce, orange juice, ginger, garlic, sesame oil and fresh coriander, if using. Season with freshly ground pepper.

3. To make the noodle salad, mix together the noodles, sugar snap pea and carrots. Toss with the dressing and sesame seeds. Season with salt and freshly ground pepper.

4. Heat a lightly oiled, non-stick griddle or frying pan. Add the marinated tuna steaks and sear for just 1-2 minutes on each side.

5. Remove the tuna from the heat and cut each steak into slices. The tuna should still be rare inside.

6. Divide the noodle salad among four serving bowls. Top with the seared tuna slices, drizzle with a little sesame oil and serve at once.
