Method

1. Heat a heavy-based frying pan until very hot.

2. Take off the direct heat and add the seeds from the black and green cardamom pods, the cinnamon stick, cloves, cumin, black cumin, fennel, coriander and nutmeg. Return to the hob and dry-fry, stirring, for 1 minute.

3. Remove the spices from the pan and crush to a powder in a pestle and mortar. Stir in the ginger powder, if using.

4. Add the garam masala to your dish just ten minutes before the dish has completed cooking.

This is the worst garam masala I have ever tasted. There is way, way too much black cardamom! Put this with your curry and it will ruin it. Very disappointed!
