Scottish broth and barbecued steaks

Succulent steaks in a simple broth make a fabulous eating from Rowley and Melissa
Ingredients
For the Scottish Broth:
- 3 small Shallots, finely chopped
- 2 Potatoes, diced
- 1 red pepper, diced
- 2 Carrots, diced
- 1 vegetable stock cube
For the steaks:
- 3 tbsp Olive oil
- 2 beef steaks
- pinch of Chilli powder
- 1 clove Garlic, finely chopped
- black pepper
Method
1. To make the Scottish broth, place the vegetables into a pan with the stock cube, cover with water and bring to the boil.2. Simmer for 10-12 minutes until the vegetables are soft but still retaining their shape.
3. Drizzle a little oil over the steaks and rub them with a little chilli powder and garlic. Season with a little salt and freshly ground black pepper.
4. Place the steaks on a barbecue and cook to your liking, turning once. Serve the steaks immediately with the broth, accompanied by a salad and some crusty bread.
