Method
2. Add the sugar and cook for 1-2 minutes. Add the vinegar with the orange zest, then the brown ale and soy sauce.
3. Cook, stirring now and then, until reduced by half. Finally add the sultanas, mango, tomato flesh and season with salt and freshly ground black pepper.

60ml vegetable oil2 red onions, sliced
4 garlic cloves, crushed
1/2 tsp chilli flakes
1 cm fresh ginger root, finely diced
50g soft brown sugar
30ml Balsamic vinegar
grated zest of 1 orange
60ml brown ale
1 tsp Soy sauce
25g sultanas
1 small tomato, skinned, de-seeded, diced
1/2 Mango, diced
