Method

 
1. Mix sugar and butter to paste, add flour and egg whites, mix together and leave to firm in fridge.

2. Preheat the oven to 200°C/gas 6.

3. Make a template from a sheet of plastic in the shape of a painter's palate. Place onto a non-stick mat and spread the mixture over the top of the template, remove template and bake in the oven for about 3-4 minutes until golden brown. Leave to cool.

4. Mould the caramelised sugar into the shape of a paint brush.

5. Serve painter's palate on plate with 3 different sorts of ice cream and place paint brush on top. Serve.

25g Butter, softened
50g caster sugar
50g plain flour
1 1/2 egg whites

For the paint brush:

1 tbsp caramelised sugar
