This fabulous ice cream from James Martin couldn't be easier - simply mix puréed strawberries, cream and sugar, and freeze

Ingredients

  • 600g Strawberries, hulled and sliced
  • 600ml double cream
  • 280g caster sugar

Method

1. Put the strawberries in a food processor and blend to a purée.

2. Tip the purée into a mixing bowl. Stir in the cream and sugar, then whisk until well blended.

3. Pour the mixture into an ice cream machine. Chill according to the manufacturer's instructions.

4. Pour into a freezer-proof container, cover the surface with cling film and freeze until hard.

you can make ice cream by putting the mix in the freezer and taking it out for a stir every 15 minutes or so. It will be grainier in texture but the flavour is still magic! Also try with Greek yoghurt, amazing.

I havn't tried this one yet, but other soft fruit ice creams can be made without an ice-cream machine: during the freezing process, the mixture needs to be stirred with a fork every couple of hours until completely frozen. I think the machine keeps it agitated to prevent ice crystals from forming.

This is the tastiest ice cream ever! tastes just like strawberries and cream with meringue and so easy to make. Tip: add the sugar gradually and taste.

Very easy recipe! I would rather if it came with instructions if you don't have an icecream maker though.
