Softly melting cheese and sweet little nuggets of corn make Sophie Grigson's crisp fritters a sure-fire winner

Ingredients

  • 85g plain flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1 Egg
  • 150ml Milk
  • 110g frozen Sweetcorn
  • 75-85g just-ripe Camembert, brie or Reblochon cheese, ind removed and cut into small dice
  • freshly ground black pepper
  • extra virgin Olive oil, for frying

Method

1. Sieve the flour, baking powder and salt into a bowl. Make a well in the centre and break in the egg. Start whisking the egg into the flour, gradually adding the milk, to make a smooth batter. Stir in the sweetcorn, cheese and pepper.

2. Heat a little oil in a pan over a moderately high heat. Drop tablespoons of the batter mixture into the hot oil, allowing a good space for spreading in between each. Fry for 1-2 minutes, until golden brown underneath, then turn over and fry on the other side until golden

3. Drain on kitchen towel and serve immediately.

These are so easy to make and absolutely delicious. A very good alternative way to serve sweet corn. Good with chicken dishes - the kids love them.
