Herring Caviar Dip

Method

 
1. Pre-heat the grill and make the toast. Cut the crusts off the bread and toast on both sides. Carefully slide a sharp knife between the two toasted sides and peel them apart. Then simply put the toast back under the grill and toast the un-toasted sides; the slices will curl at the edges.

2. Cut the toast into triangles and gently spread them with the cream cheese. Top with a dollop of herring caviar, season with a squeeze of lemon juice and garnish with a sprig of dill. Serve immediately.

250g cream cheese
juice of 1 lemon
