Only a real fool would fail to be impressed by this dreamy, creamy ever-so-easy raspberry dessert from Sophie Grigson
Ingredients
- 400 g Raspberries
- 2-3 tbsp caster sugar
- 250g Mascarpone
Method
1. Mash the raspberries with a fork and stir in sugar to taste.2. Beat the Mascarpone lightly to loosen and then gently fold in the fruit. Add a little more sugar if needed, although the best fools retain a touch of sharpness to balance the richness.
3. Pile the mixture into glasses and chill until ready to serve.
