Gioconda Scott's recipe combines tender, ginger-marinated squid with peppery rocket leaves to make a flavourful salad

Ingredients

For the salad dressing:

  • 3 tbsp Olive oil
  • 2 tbsp lemon juice
  • black pepper

Method

1. In a pestle and mortar pound together the ginger, garlic, chilli, lemon zest and salt into a paste. Mix in the lemon juice.

2. Toss the squid strips with the ginger paste, coating thoroughly. Cover and marinate in the fridge for at least 20 minutes.

3. Meanwhile, make the salad dressing. Whisk together the olive oil and lemon juice and season with salt and freshly ground pepper.

4. Pour the olive oil into a large, heavy-based frying pan and heat through.

5. Once the oil is hot add the marinated squid. Cook for 3-5 minutes, turning over during that time, until the squid has just whitened. Do not over-cook the squid.

6. Toss the rocket salad with the dressing. Top with the fried squid and serve.
