1. Place the cherries in a clean preserving jar. Pour in the brandy and add the cinnamon stick and sugar.

2. Seal tightly and store for 2 months to infuse.

If you first remove the stones from the cherries the flavour will be much stronger. Then, when the brandy is decanted the cherries can be served with ice cream or yogurt !, Simply delicious and nothing gets thrown away. Make it now and enjoy Christmas.

I have never made this recipe before, so please ignore my ignorance but do I leave the cherries whole? Do they break down into the brandy or do I drain at the end infusion.
