For a witty Halloween dessert try Paul Brodel's recipe for ice cream-filled oranges, carved to look like minature pumpkins

Ingredients

  • 8 navel Oranges
  • 1 ltr dark chocolate or fudge ice cream
  • 8 cinnamon sticks

Method

1. Slice the top of each orange (reserving the sliced tops) and scoop out the pulp leaving a shell. Cut out the flesh from the sliced tops too.

2. Carefully cut Jack O Lantern faces in each hollowed out orange. Cut a small hole in the centre of each sliced orange top.

3. Freeze the hollowed orange shells and the tops for 1 hour.

4. Pack scoops of the ice cream into the frozen shells, taking care not to let the ice cream come out through the eyes or mouth.

5. Place the tops over the ice cream and insert a cinnamon stick through the hole.

6. Freeze the filled orange shells for at least 3 hours.
