Ingredients


Main:

1 breast of lamb, filleted
115g long grain rice, slightly undercooked
3 tbsp Olive oil
2 Onions, finely diced
3 garlic cloves
half a tsp Cumin
half a tsp Paprika
170g finely minced lamb
4 tbsp finely chopped fresh mint
finely grated zest of 2 oranges
juice of 1 orange
1 tbsp Honey
1 small egg
1.2 ltr lamb stock
salt and fresh ground black pepper

For the onion cream:

2 tbsp unsalted Butter
3 large onions, finely chopped
1.2 ltr beef stock
2 garlic clove, chopped
1 tbsp clear honey
1 bunch of thyme
3 tbsp Brandy
150ml double cream
salt and fresh ground black pepper
