Here this classic Italian dish, combining eggs, spinach and cream, is cooked in a flash in the microwave
 

Eggs florentine

Method

 
1. Wash the spinach, drain and tear roughly. Place in a bowl, cover with film and microwave at 650W for 30 seconds until just wilted. Season with salt and freshly ground pepper.

2. Lift the spinach into a shallow gratin dish and make three hollows using a spoon. Break an egg into each and add the cream, salt and pepper. Sprinkle with Parmesan and nutmeg.

3. Cover with film and microwave at 650W for about 1 minute so that the yolks are still a little soft.

4. Serve with crusty bread.

Ingredients


Main:

110g fresh spinach, roughly torn
salt and fresh ground black pepper
3 Eggs
3 tbsp single cream
1 tbsp Parmesan, freshly grated
pinch of grated nutmeg
crusty bread, to serve
