Method

1. Peel the pineapple and cut into quarters. Cut out and discard the tough inner core. Cut each quarter lengthwise then slice across into chunks.

2. Halve the honeydew melon and scoop out the seeds. Cut into slices, peel and slice into chunks.

3. Cut the watermelon into chunks, discarding skin and any seeds.

4. Cut the starfruit into four, then slice finely.

5. In a large bowl toss together the pineapple, honeydew melon, watermelon, starfruit and coconut. Halve the passion fruits and scoop out their pulp into a separate bowl. Mix in the lime juice, then stir in the ground chilli and caster sugar, mixing until the sugar has dissolved.

6. Pour the chilli dressing over the mixed fruit, and toss together. Cover and chill until serving.
