    Lovely filling, I'd definitely use this for stuffing other vegetables or even as a side to pasta or a jacket potato. Next time I might try a light coating of olive oil on the aubergines too.

    I'm sorry, entirely my fault! You need: 200 g chilled butter, cut into pieces. I've amended the recipe above. It looks delicious and I'm thinking about making for my vegetarian sister this Christmas. Hope you all enjoy! Apologies again for missing out the ingredient.

    Gorgeous, made this as part of a tapas style dinner and guests loved it. After grating for the zest, I cut up the lemon into quarters and added to the pot. Plus I added more honey than the recipe called for to sweeten. Also ended up marinating for a few hours before cooking. Lovely, would def cook again.
