Lovely filling, I'd definitely use this for stuffing other vegetables or even as a side to pasta or a jacket potato. Next time I might try a light coating of olive oil on the aubergines too.

Gorgeous, made this as part of a tapas style dinner and guests loved it.
After grating for the zest, I cut up the lemon into quarters and added to the pot. Plus I added more honey than the recipe called for to sweeten. Also ended up marinating for a few hours before cooking.
Lovely, would def cook again.
