Recipe Story

Pan Haggerty is a local dish cooked by the people of Northumberland. Because it uses scraps of food and you can make as much or as little as you like and add anything you want to it was used quite often by the poor pit people of Northumberland

Ingredients


Potatoes peeled and sliced thin slices
Bacon (as much or as little as you like - can be substituted with sausage or can be used together) cut into large pieces
Onion - large - peeled and sliced
Cheese grated (again as much or as little as you like)

Method


Put oil into a frying pan which has a lid and heat slowly
Add a layer of potatoes
Add a layer of onions
Add a layer of bacon/sausage
continue in this manner until you have used up all your ingredients
Make sure you finish with a layer of potatoes
Sprinkle with a teaspoon of salt
Put the lid on the frying pan
Turn the heat down to a gentle heat onto of the stove
Add the lid
Cook for 20-25 minutes until the potatoe is cooked
Heat up the grill
Place the cooked potatoes.bacon.onion under the grill and grill until the potatoes are a golden brown and crunch
Add the grated cheese and place under the grill and cook until the cheese has melted
Serve in wedges with some nice crusty bread
