Mackerel Rice

Recipe Story

Like most of my recipes, this one came about when I was faced with an almost empty larder and a raging hunger! Quick, easy and delicious.

Ingredients


150g rice
3-4 peppered smoke mackerel fillets
1 pinch of Saffron
1 tsp cumin seeds
1 tsp mixed herbs
1/2 tsp dried chilli flakes
1/2 tsp ground coriander
Salt
Ground black pepper

Method


1. Put the rice into a medium saucepan and cover with 300ml of cold water. (There is no need to wash the rice)
2. Add the saffron, cumin, herbs, chilli and coriander and bring the rice to the boil.
3. Once the water is boiling, reduce the heat, stir the rice with a fork to mix in the herbs and spices, put a lid on the pan and allow the rice to simmer for 25 minutes or until all the water has been absorbed.
4. Meanwhile, skin the mackerel fillets and remove any bones that have been left in. put the fillets into a bowl and, using a fork, break up the mackerel into small pieces.
5. Once the rice is cooked, turn off the heat, tip the mackerel into the pan and replace the lid. Wait for 2 minutes.
6. Remove the lid from the pan and, using a fork, mix up the entire concoction.
7. Can be eaten as a main meal with a few steamed vegetables or is a great accompaniment to grilled pork.
