this recipes is from my husbands nanna, there is nothing in this recipe that jumps out at you as different or interesting, they are simply the best mince pies i have ever tasted, the pastry is so light and amazin. she is just so old school and one of the best baker`s i have ever met.

Ingredients


1lb self raisin flour (sifted)
half lb Lard
water to bind
jar of mincemeat

Method


there is no set amount this makes, or a set amount of water, all flour is different, and people make different size mince pies.
all in one method for flour and lard and rub it togethor, adding water to bind, just use common sense not to over wet the dough.
once mixed, place in cling film, then into the fridge for half hour.
preheat gas mark 6

flour the surface, roll out the mix to a 1cm thickness, use the dough cutter, then using a 12 dipped tin line each dip with a sheet of the pastry then a heaped tsp of mincemeat then put a lid on each one, repeat this until all the dough is gone. bake in the oven for 20 minutes, until golden. leave on wire rack to cool, sprinkle with caster sugar
