Recipe Story

My nanny collins lived in a farming area in the midlands of Ireland and we would go down to her for our holidays every year. I'm the eldest of three and developed a taste for the racy novels she loaned me (covered in the religious magazine covers so my daddy wouldnt see them) and for these potatoe cakes that were served dripping in melted butter...yummy.
She would get me to peel the spuds and I would always do too many, knowing that the leftovers would be put to good use in these...
I dont make them nearly as often as I would like, but they are gorgeous for breakfast or lunch and its a must to use real butter..none of your whipped air nonsense! And it really is better to use cold day old mash as the potatoes will be sticky and starchy otherwise and will take from the end result.

Ingredients


About six potatoes boiled, mashed and allowed to go cold overnight.
2 or 3 cups of flour.
good dollop of butter to serve.

Method


Using the bottom of a cup or your hand, work the flour into the potatoes till its dissapeared. You might need more or less flour depending on how floury your spuds are, waxy ones will be needing more.
It should be the consistency of pastry.
Turn it out onto a floured board and roll it out until its a round about the thickness of a dinner plate, or 1/8 of an inch.
Cut it into triangles and put the triangles onto a HOT DRY IRON frying pan!!! Fry till the cakes are turning just slightly dark browny black and then turn them.
You should then serve them, using a thread to split them and put a dab of butter in the middle like a sandwich and then eat them hot.
