Recipe Story

Took some of these into the office - they woofed them down and one of the staff took it with him to a coffee bar to have with his coffee. The restaurant owner begged me to make them for his cafe -

Servings:

4 6 people

Level of difficulty:

Easy

Ingredients

Corn Flakes (about 2 cups when crushed)
Finely chopped mixed fruit (1 bag)
1/4 packet maraschino cherries (red, yellow, green)
1/2 cup mixed chopped almond pieces and chopped peanuts
About 1/4 cup sultanas and raisins mixed and chopped
1/4 packet dark chocolate buttons (Nestle)
1/4 cup Condensed milk

If not eaten immediately can be stored in airtight tin in fridge for 2 - 3 days.

Method

Method:
Crush Corn Flakes add all other ingredients which have been chopped.

Add condensed milk until mixture is fairly sticky.

Line a flat tray with baking paper, sprinkle little flour and put tablespoon at a time onto baking tray. Pat down till flat and round with back of spoon. ( Tip: Slightly wet your hands to get the florentines in a nice flat round shape.

Bake in moderate oven until corn flakes are light brown (About 8-10 minutes)

Meanwhile melt chocolate buttons over simmering water in double boiler. When florentines are cool coat back with chocolate ( I use a rubber spatula) and just before the chocolate sets use a fork to make squiggles through the chocolate to make them look professional.
