Valentines Beef Stew

Recipe Story

I cooked this for my boyfriend on Valentines Day and as always when making something like this, I cook a huge batch and freeze it in portions for those evenings when I haven't got time to cook from scratch. I used 5 steaks and cooked a massive dish of dauphinoise potatoes to go with it. However I didn't take in to account how delicious it is and, apart from my plateful, my boyfriend ate the lot!

4 (Or two if you're feeding my boyfriend!)

Ingredients


1 tbsp Olive Oil
3 tbsp Seasoned flour
5 Good quality beef steaks - cubed
8 Shallots - peeled and halfed if large
400ml of Good quality beef stock
2 tbsp of redcurrant jelly
3 sprigs of Thyme - leafs only chopped finely
16 mushrooms - halfed

Method


1. Preheat oven to 180
2. Heat oil in a large oven proof casserole
3. Toss the Beef in the seasoned flour until coated then add to the hot oil and brown all over. remove to a plate.
4. Add the shallots to the casserole and fry until lightly coloured.
5. Return the beef to the dish and add the stock, recurrant jelly and thyme, season and bring to the boil.
6. Put the lid on the dish and pop into oven for 1 hour 15 mins.
7. Add the mushrooms to the casserole and continue cooking in the oven for another 45 mins.
8. Serve with your choice of paotatoes and green beans
