leek and potato soup

Recipe Story
i always thought soups were complicated to make but when a friends mom gave me this recipe i realised i was wrong,ive simplified it to suit my taste but feel free to add additional veg.
Servings:
3-4 portionsLevel of difficulty:
EasyIngredients
3 medium leeks
1 large onion
3 medium potatos
handful of frozen peas (optional)
1 pint of chicken stock (cube is fine)
tsp veg oil
Method
1.wash and slice leeks,dice onion,cube potato
2.fry all of the above in the veg oil in a large frying pan or wok
3.add hot stock, add peas, season, bring to the boil and simmer for about 20 mins or until veg has softened
4.blitz mixture until smooth,serve with crusty bread.
