Salmon With Lime, Ginger & Honey dressing

Recipe Story

This is a recipe that by experimentation I finally managed to concoct. It is an easy recipe to follow and t should take no more than 30 mins including preparation

Servings:

2 persons or more if desired

Ingredients


2 Salmon Fillets
Half an inch of fresh ginger peeled and finely chopped
1Tbs honey (or more to taste)
Juice and rind of 1 Lime
Salt and peper to tatse
Butter 1 or 2 oz
1 small shalott very finely chopped.
Two slices of brown bread.

Method


Saute the Shallot in half of the butter until they become opaque.
Add in the honey and stir for a couple of minutes.
Slowly simmer then add the lime juice and rind and simmer till the liquid becomes thicker and set aside to use as a dressing.

Put the rest of the butter in a pan and cook the salmon for 3 minutes on each side until it has turned pink.

On a bed of salad eg rocket place the salmon on top and then drizzle the cooked dressing over and around the salmon.

Serve with small triangles of toasted brown bread
