Nan's boiled fruit cake

Recipe Story

I can always remember my nan having one of her gorgeous boiled fruitcakes waiting for us each time we visited when we were children. When I used to go and stay on my own my Nan taught me how to cook it and passed the recepie to me. Everytime I have the cake it reminds me of summer holidays staying with nan when I was young.

Servings:

2 x 1lb loaf tins or 1 x 6" round tin

Ingredients


100g (4oz) Margarine
150g (6oz) Dark Brown Sugar
150g (6oz) Sultanas
150g (6oz) Raisins
50g (2oz) whole glace cherries
1 cup water (or 1/2 water 1/2 brandy!)
1 heaped tsp Bicarb of Soda
1 heaped tsp mixed spice
1 tsp fresh grated nutmeg
2 large eggs beaten
200g (8oz) SR Flour

Method


Place the following ingredients into a large saucepan Margarine, Dark Brown Sugar, Sultanas, Raisins, whole glace cherries, water, Bicarb of Soda, mixed spice and nutmeg bring to the boil stirring some of the time.
Then simmer for 1 minute and leave to cool.
When cool add the following beaten eggs and SR Flour.
Line cake tin and bake in centre of oven 350F, 175C for approx 1-1 1/2 hours.
Sprinkle with granulated suager whilst warm and serve warm.
