My Mum found the idea for this recipe years ago in a magazine but adapted it. We never did know what it was called so we call it West Country Hotpot

Ingredients


250g sausage, 250g bacon, 250g mature cheddar cheese (grated), 1 large onion,(chopped) 1kg potatoes, finely sliced, 250 ml chicken stock, salt and pepper to taste

Method


Peel and finely slice the potatoes, wash and drain.Grate the cheese. Dice the bacon and sausage into bite sized pieces. grease an oven proof dish and arrange layers of all ingredients, adding salt and pepper to taste. ending with a layer of potatoes. Pour the stock over. Cover and place in a pre-heated oven at gas mark 5/6 190/200c for approx 1hour or until the potatoes are soft. uncover and cook on top shelf until the potatoes are crisp and golden brown. serve
