Recipe Story

One Christmas my grandmother forgot the ingredients for her desert, and did not have enough time to go to the store. It was quite a disaster. She wanted to use the Indonesian influence on Dutch cooking. My granny came up with this recipe and it was a great success, somehow she pulled it off. Everybody at the Christmas dinner loved it so now we use it for dinner parties, snacks and just deserts.

Ingredients


3 firm green tipped bananas
4 eggs separated
30 grams flour
275 ml lemon juice
1/2 tsp salt
Oil for frying
6 scoops of vanilla ice cream
200 grams finely chopped fresh nuts of any sort

Method


1-peel and split the banana lengthwise
2-cut the bananas into thick 1 cm slices
3-dip the pieces in lemon juice
4-for the batter, beat egg yolks until thick and light
5-add flour and salt
6-beat the egg yolks until stiff but not dry and fold into yolks
7- drop the drained banana pieces into the batter one at a time
8- pick up with spoon
9- drop no more than five pieces of banana in the few inches of hot oil
10- in about 10 seconds done, if not done wait till golden brown on both sides
11- drain on paper towels
12- serve bananas around scoop of vanilla ice cream and sprinkle with nuts
