Quick 'make-do' pud

Recipe Story

My grandmother used to make this pudding whenever I went to stay with her ('to fill me up' she said). Gran used to bake this in an oven but for speed now I make it in the microwave. If I am feeling lazy this is just what I give myself for tea or when I need cheering up. It is a very simple thing to make even my granddaughter makes it. This is a really good 'comfort' food and very versatile.

Serves 4 people or 1 person being greedy!!

Ingredients


1 pear (apple, orange in fact any fruit can be used. Jam/honey/golden syrup or marmalade could be used if you wish.))
25 grams sugar
25 grams butter
25 grams S.R. flour
1 egg
2/4 tablespoons milk depending on size of egg.

Method


First grease a pudding basin thoroughly with a little butter and dust with caster sugar to prevent sticking.
Next peel and slice pear (if hard fruit used soften in a pan with a teaspoon of sugar) and place in the bottom of basin.
Next beat sugar and butter together until light and creamy.
Then add the egg (beaten) to the mixture and mix thoroughly.
Then fold in the flour and if mixture appears to be a little thick add a little of the milk until the mixture falls of the spoon with a gentle flick.
Pour this mixture on top of the fruit and level the top.
Place in the microwave for 4 - 4 1/2 minutes on High.
Test with scewer to check if cooked. Let it cool slightly then turn out on to a plate and serve with custard or cream to taste.
