La Bamba Chicken

Truly a marvellous dish! An interesting blend of the Oriental and Western, creating a rocking fusion-- a must try!! It gets you groovin'

Ingredients


200 g leg/breast of chicken
5 slices pineapple
1 cup milk
1 medium sized onion, chopped fine
100 g cheese grated fine
50 g macaroni
2 tbsp flour
1 tbsp sugar
1 tsp pepper powder
Salt to taste
2 tsp oil

Method


Boil the leg/breast of chicken till tender.
Keep aside to cool. When cool, shred and debone the chicken.
To the milk, add the macaroni and boil till it softens.
Add the flour and sugar to the macaroni-milk mixture and stir till the milk thickens.
Heat oil in a flat bottomed pan.
Add the chopped onion and fry till light brown.
Add the shredded chicken and continue to fry till light brown.
Remove from heat and keep aside to cool.
Squeeze the juice out of the pineapple slices and slice them into fine pieces.
Add the pineapple to the onion-chicken mixture.Also add a dash of salt and pepper powder. Stir well.
Grease a flat and deep baking dish.
Put the fried onion-chicken mixture into it and spread it evenly.
Pour the milk-macaroni mixture over it.
Sprinkle liberally with the grated cheese to cover the entire surface.
Grill for 5-7 minutes till the cheese is melted.
Remove from the grill.
Chill before serving.
