Ingredients


3 tims of plum tomatoes
veg stock
chilli powder
1 large onion
2 peppers
3/4 cloves garlic
3 sticks celery
1 tin of kidney beans
basmati rice

Method


fry diced onion an garlic in glug of olive oil for 10 mins then add chopped celery an peppers. cook further 5/10 mins. add chilli powder to taste, 1 tsp ish. add veg stock, 1 tbls ish. add 3 tins of tomatoes plus juice. simmer away for 45 mins.
great with basmati rice
