Recipe Story

This amazing soup recipe was developed by my German sister-in-law Christiane, and I during an evening of "creative cooking" at my wife's family home in Thuringia (former East Germany). I wish I could say this was an old traditional East German recipe but in truth we developed it during Christmas 2006 while discussing the benefits of partaking of Cook's Nips!!
Be warned this is a meal in itself.

Ingredients


olive oil
2 large onions
1kg mixed soup vegetables
750gm lean pork mince
20cm smoked sausage
420g tin Canneloni beans
2 420g tins mushrooms (German version from Lidl)
240ml soured cream
1750ml chicken or veg stock
250ml bottle creamy curry sauce
salt, pepper
2 tbsp paprika powder

Method


Use a very large pot
Fry diced onions in olive oil until soft
Add mince and smoked sausage and brown
Add vegetables and allow to sweat for 5 minutes
Add stock and simmer for 15 mins
Add beans and mushrooms and simmer for a further 5 mins
Add curry sauce and sour cream.
Serve with crusty bread of your choice.
