Recipe Story

my mother was always cooking and as a child when i came home from school there would always be something nice for tea, my favourite was always welsh cakes with butter. My children love welsh cakes but do not like dried fruit so i use coconut or chopped cherries instead.

Ingredients


500g self raising flour
250g margarine
250g caster sugar
200g sultanas, coconut or cherries or what ever you prefer
2 medium free range eggs

Method


place the flour and margerine in a large bowl and rub together so the mixture resembles breadcrumbs,add sugar fruit and mix well, beat the eggs in a bowl and add to mixture,mix well until it comes together into a large ball, if the mixture is dry add a small amount of milk, roll out on a floured surface to about just under 1 cm thick and using a small round cutter, cut out the cakes until all the mixture has been used. Heat up a hot plate to medium heat or a frying pan or in wales we use a plank (a large round flat metal pan with a handle which goes on the cooker ring)cook the cakes on both sides until nice and brown and cooked inside, they will feel firm when cooked if getting too brown and still soft in the middle turn down the heat, continue cooking until the cakes are all done, place on a wire rack to cool and place in a cake box these will usually keep for 3-4 days if you can.
