Fairy Cakes Light

Recipe Story
Many years ago when I used to bake cakes, the sponge, no matter what I did always came out heavy and very unappetizing. Then I noticed a tip on the back of a pack of cornflour. Add 1oz of cornflour to your cakes to make them lighter. I have never looked back after that tip my cakes are lovely and light. Keeping more air in the mixture by how you mix it is also a good tip. I always use an electric mixer and a metal spoon.
If you don't like using an electric mixer, use a wooden spoon for mixing up to the flour stage then change to a metal spoon.

EasyIngredients
Plain Cakes
175g Margarine
175g Sugar
3 Large Eggs
25g Cornflour
175g SR Flour
To do chocolate cakes
Add 1tsp 100% chocolate powder (Divine Oxfam)to the flour.
Topping Glace Icing
175g Sieved Icing Sugar
2-3 tbl hot water
Hundrends and Thousands
Cherries halved
Topping for chocolate cakes.
Bar of milk or plain chocolate.
Method
1. Pre-heat oven on Gas 5, Elec 375F 190C.
2. Place baking cases in bun trays.
3. In large mixing bowl, mix/beat together margarine and sugar until creamy.
4. Add the eggs and mix/beat until smooth.
5. Sieve flour, cornflour and (chocolate powder if using)together and add to mixture.
6. When you are mixing the flour in always stir with a metal spoon. Stir the mixture round the bowl once; bring the spoon down the middle of the mixture twice lifting as you get to the bottom, continue until mixture is smooth. This lift adds more air into the mixture. As you continue you can see the volume changing.
7. Fill cases just above half with the mixture.
8. Bake in oven for 15-20 minutes until light brown and spring back when touched.
9. Sift the icing sugar into a mixing bowl. Gradually add the hot water. Beat the icing well with a wooden spoon, adding more icing sugar or liquid to achieve a consistency. Let it just find its own level in the mixing bowl. Melt the chocolate in a bowl over a saucepan of simmering water. Stir until smooth. Ice each cake, place a cherry on each one and sprinkle with hundred and thousands.
