Apple crumble cake

Recipe Story

I concocted this recipe last summer when my neighbour gave me bags full of huge Bramley apples from her old tree. I used items I found in my pantry & every time I make it I'm asked for the recipe so I wrote it down for them.

Ingredients


2 large Bramley apples
25ml brown sugar
juice of half a lemon
150ml water
200g wholewheat self raising flour
100g oats
100g unrefined brown sugar
5ml cinnamon
250g block cold butter

Method


Peel, slice & lightly cook 2 large Bramley apples with sugar, lemon juice & water. (Or you could use any other fruit you fancy - I've made it with cherries, blackberries etc as well.)

In a food processor whizz together:
wholewheat self raising flour, oats, brown sugar, ground cinnamon & the block of cold butter (cut up into chunks).

This makes a nice crumbly mixture - don't overdo it as we don't want pastry!

Grease a cake tin with loose bottom.

Place half the crumble mixture in the bottom & press down.

Top with cooked apples & sprinkle the remaining crumble on top.

Bake at 180 C for 45 mins.
Can also be baked in the baking oven of an Aga for the same length of time.
