Recipe Story

This recipe is one of my Mums which I have modified over the years to include different tastes. Originally it was a very simple dish of onions potatoes swede carrots and sausages that my mum made once a week to provide a good wholesome meal on a very tight budget

Ingredients


1 kilo potatoes
1 large onion
1 leek
3 large garlic cloves
.25 kilo carrots (3)
.25 kilo swede (2-3)
2 yellow/orange peppers
8 to 12 large pork sausage
salt
crushed chilli (1 to 2 tsp)
pepper
herbs de provence (2 tsp
tbsp honey
2 tbsp olive oil
lemon juice (2 tsp)
150ml water

Method


chop all the vegetables into chunks, finely chop the garlic and slice the peppers. Place into a large baking dish and sprinkle over the olive oil,herbs and salt/pepper, pour in the water, cover with foil and place in a hot oven at 150C for about 1 hour or until the veg
has softened turning the veg to prevent sticking. Add the sausage and pour over the honey and lemon juice
Put the dish back into the oven without the foil on 200C until the veg has browned and the sausage has cooked. Remove from oven and serve using the juice to make a sauce if required
The dish can be made without the sausage as a vegetarian meal.
