Recipe Story

I can always remember having this amazing lemon meringue pie as a child.The recipe was in my great nan's hand written cook book,it was all taped together and tied so it didn't fall apart anymore.This pie was made and taken on great family picnics.My great nan's son Ken used to eat the pastry and leave the lemon filling the best bit till last,until some one on the picnic stole it thinking he didn't want it.The recipe came from Canada origanlly.

Ingredients


1 cup of sugar
2 lemons
1 cup of water
1 heaped tablespoon of cornflour
2oz caster sugar
fool proof- use same cup through recipe when using cup.

Method


place a cup of water in a saucepan with a cup of sugar heat until dissolved then add the lemon zest and juice of the lemons,mix the cornflour with alittle water and stir into saucepan boil for 1 min to cook cornflour.take off the heat and leave to cool slightly.seperate the eggs add the egg yolks to the lemon mixture in the saucepan and beat.whisk the egg whites until peaks then add 2oz caster sugar stir in,put lemon mixture into a blind baked pastry case,put whites on top and bake until brown on top gas 3-4.approx 10-15 mins to save time buy pastry or flan case.
