Recipe Story

"Dublin can be heaven with Coffee at 11" is an old Irish Song. Maybe in the 21st century that saying is useful but growing up in a Council Estate in the 80's you were lucky to get nescafe. everyday was a set menu week in week out. Monday was chops tuesday mince wednesay egg and chips etc etc. and come rain or high water Saturday was soup day or as some people call it Stew. Heres my take on my nanas recipe she reared 12 children and my mam beign the youngest stayed with her when she got married and she helped raise me and my 2 sisters. My nana was always in the kitchen baking cooking and giving her tupence worth but this recipe has gone down through generations in all irish families each with its own variation and no matter which variation no one can resist it even american relatives ask for it when they come home.

Ingredients


1lb mince
8 sausages
450g stewing beef
6 potatoes
4 carrots
2 sticks celery
1 onion
1 parsnip
1/3 turnip
salt & peppre
Parsley
bay leaf
oxo cube
beef & veg soup

Method


peel and chop finely 1 onion
peel and chop into cubes turnip and parsnip
peel and slice carrot
peel and quarter potatoes
cut steak pieces into small cubes( about thumb top size)
add packet soup to 850ml of boiling water along with oxo cup stir until mixed .
add all veg along with parsley.break mince / crumble mince into soup along with steak pieces.
add bay lead and bring to the boil.
Some sediment/fat may rise to the top from mince strain off. Now add sausages cover and simmer for 1-1.5 hours . Occassionaly stir and taste along way season with salt and pepper as desired. Serv immediatelt with white bread
