Quick Leek and Bacon flan

Recipe Story
A favourite of mine because it lets me avoid making pastry. This has been refined many times within my family because it is a great timesaver and can either be special or made of left-overs to suit
Servings:
serves four at tea time or two for hungry people for dinnerLevel of difficulty:
EasyIngredients
Half a pack of Jacobs Crackers
2 Tbs poppy and/or sesame seeds
30g butter
2 eggs
250ml milk
pinch powdered ginger
2 small sweet leeks
2 rashers of bacon or large slices of salami
50g grated gruyere
salt and pepper to taste
Method
1. Melt butter and fry seeds to brown
2. Crush crackers and line flan dish with them
3. Pour on melted butter and spread seeds evenly over crackers
4. Slice and fry leeks with ginger
5. Grill bacon (if used), slice meat into strips
6. Beat one egg, beat in yolk only of second egg, add milk, season to taste
7. Layer leeks, meat and cheese onto biscuit base and cover with liquid
8. Bake for 15mins at 150 degrees or until brown
