Feta and Re-fried Bean Tortillas

Recipe Story

It comes from my English granny who is very fond of cooking. She made up the recipe and now we have it all the time. Yum Yum! We usually make double quantaties so that me and my sisters can take them cold for our school packed lunches.

Ingredients


3tbs olive oil
6 red onions, roughly chopped
3 cloves garlic crushed
1tbsp ground cummin
3 tins kidney beans, drained and rinsed
1 tin chopped tomatoes
250g cherry tomatoes, halved (optional)
200g feta diced (optional)
Corrianda, chopped
tortillas

Eat with any of the following:
Crunchy lettuce
Olives
Grated cheese
Guacamole
Sour cream
Mango,chilli and red onion salsa (i.e.all chopped finely and mixed with lime juice)

Method


Fry onions and garlic in oil until golden.Add cumin beans and tinned tomatoes.Cook gently until beans are soft and all the flavours are combined.When it is almost time to eat, mash up the mixture a little and add the cherry tomatoes, feta and corrianda into the pan. Heat gently until bubbling.
Heat tortillas in oven or microwave.
Let everyone pile the beans and fillings onto their own tortillas, roll up and eat.
