Apple and Tomato Jam

Recipe Story
When I was a young boy I used to love going to Grandma's because there was always the smell of baking. Her finest dish was the Apple and Tomato jam which she used to make the most delicious jam tarts. This recipe is an old Norfolk recipe that was passed from my Grandma to my Mum and through several generations previous.

IntermediateIngredients
500g apples - prepared weight
500g tomatoes - prepared weight
1kg sugar
Juice of half a lemon
Method
1. Peel, core and cut apple into small pieces
2. Skin, core and chop tomatoes
3. Slowly cook fruit to a pulp with lemon juice
4. Add warmed sugar
5. Bring to the boil, and boil rapidly for 5 mins
6. Turn down the heat, cook for a further 15-20 minutes stirring to prevent sticking
7. Pour into hot sterilised jars
