'NEW YORK' CHEESECAKE

Recipe Story

This cheesecake was brought into the family by my late mother and has become such a firm favourite that my daughter 'commissioned' it for her wedding cake.

Ingredients


Base: 50g (2 oz) butter; 1 pkt. Golden Crunch biscuits.
Centre layer: 700g (1½ lb) Curd Cheese; 4 Eggs; 1 cup (61/2 ounces or 183g) Caster Sugar; good tsp Vanilla Extract.
Topping: 575ml (1 pt) Sour Cream, 2 tbsp Caster Sugar; 1 tsp Vanilla Extract.

Method


1. Melt butter, crush biscuits finely, add butter and mix together.
2. Line bottom of a 81/2" (22cm) tin with biscuit mixture.
3. Put in fridge or freezer whilst making cheese mixture.
4. Mix all 'centre layer' ingredients together and put into tin.
5. Bake at 180°C (350°F) for 45 mins. Remove from oven and leave to cool slightly.
6. Mix together all ingredients and gently pour over cake.
7. Bake at 210°C (425°F) for 7 mins.
8. Remove from oven. Looks sloppy, will set.
9. Put in fridge when completely cool.
