Recipe Story

My mother was a fantastic cook. She ran one of the first Pakistani take-aways in Tooting in the 70s. This is a simple dish, with very few spices. It sums up real 'home' South Asian cooking for me - pure, simple and tasty. Curries don't need to drown in spices and this one's been tried and tested on all the clan. My kids love it and I love my mum for passing it down to me years ago.

Ingredients


1 kg boneless chicken cut into pieces.
2-3 tablespoons of sunflower oil.
1 medium sized onion
1 can of chopped tomatoes
2-3 tsps tomato puree
5-6 pieces of garlic
1 sweet green pepper or large green chilli
1 bunch of fresh coriander leaves
1/4-1/2 teaspoon salt

Method


1.Heat oil in a wok
2.Add chopped onions and fry and until they get golden/brown.
3. Add boneless chicken pieces, stir in oil until they change to a pale colour.
4.Add crushed garlic, tomato puree and chopped tomatoes.
5. Stir rapidly on high heat for 2-3 minutes.
6. Cover wok and leave on low heat until chicken has cooked and the mixture has changed to a deeper colour. Oil should have surfaced to the top on the edges.
7. Add chlli and chopped coriander, replace lid and leave for further 10 minutes or so.
8. Serve with naan bread or zeera basmati rice and raita.
