Jan's Gluten Free Key Lime Pie

I love making people yummy food, especially cakes, biscuits and pies. My very good friend Jan is gluten intolerant and so can't eat flour - a bit of a challenge. So I made this twist on a cheesecake for her; it works just as well with normal digestives and even ginger nuts.

Ingredients


200g Gluten Free Digestives
75g Butter, melted
zest and juice of 4 limes
200ml double cream
1 x 398ml tin of condensed milk
Sugar frosted lime slices to decorate.

Method


1. Break the digestives into crumbs in a food blender and add the melted butter.
2. Press down firmly into a greased 10" flan dish, well greased.
3. In a large bowl whisk the cream until thick. Add the zest and juice of the limes and the whole tin of milk. Whisk until thick.
4. Pour over the biscuit base and leave to set for a couple of hours, preferably overnight.
5. Just before serving, brush the lime slices with beaten egg white and coat in caster sugar.
