Quick n easy Vegetable pulav

This dish as well was very famous with my mother. When she was in a hurry and we wanted something on our plates within minutes she would make this lovely one pot dish in minutes

1 cinnamon stick
2 cloves
3 cardammoms
1 large onion sliced

Method
Heat the ghee or oil in a pot and add the warming spices - cardammom, cinnamon and cloves.
Fry and add the onions and ginger with the green chilli
Fry till the onions take a rich brown colour and then add the thawed Mixed Vegetables packet.
Mix well and allow the fat to coat the Vegetables well
Now add the washed rice and season with salt.
Mix well and add the stock cube and cover with 4 cups hot water from the kettle.
When boiling add the yogurt and let it simmer covered for approximately 10 mns till all the water evaporates.
Garnish well with coriander leaves and serve with papad and chutney or pickle.
